St. James Flake
Samuel Gawith’s St. James Flake has the reputation for being one of the best flakes money can buy. Its Virginia base is blended with a generous portion of St. James Parish, Louisiana Perique (hence its name sake) and offers up flavors of hay with spicy pepper overtones. Pressed with a little added sugar, crystallization will occur on the surface when aged.
